Chocolate Cheesecake Pudding Shots

Ingredients:

  • 1 c. milk
  • 1/2 c. Irish cream liquor
  • 1/2 c. vodka
  • 1 small package instant chocolate pudding mix
  • 1 TBSP Bickford Cheesecake Flavor
  • Whipped cream
  • Chocolate shavings (optional for garnish)


Directions:

  1. Whisk together the milk, Irish cream liqueur, vodka, instant pudding mix, and Bickford Cheesecake flavor in a bowl until combined. Continue whisking for 2 minutes.
  2. Spoon the pudding mixture into shot glasses or disposable 'party shot' cups. Chill until set, about 30 minutes. The shots will have the consistency of mousse.
  3. Serve topped with whipped cream and (optional) chocolate shavings.

No Bake Mini Pumpkin Cheesecake

Ingredients:

  • 1 sleeve graham crackers (about 9 crackers)
  • ½ stick (4 tablespoons) butter, melted
  • 2 tsp sugar
  • 2 tsp brown sugar

For the filling

Directions:

Place the graham crackers in the bowl of a food processor and pulse the crackers into fine crumbs. Add the melted butter, sugar and brown sugar and pulse until combined.  Spoon the crumbs into individual 9-ounce plastic cups (or other individual sized cups for serving). Place in the refrigerator to set while you are preparing the filling.

In the bowl of a stand mixer with the paddle attachment, beat the cream cheese until light and creamy.  Add the pumpkin, flavors, and pudding mix and beat until completely mixed, scraping down the sides and bottom of the bowl to ensure that all ingredients are well combined.  Add the sweetened condensed milk and mix again until well combined.  Fold in the tub of whipped topping until well combined.  Allow the mixture to sit in the refrigerator for about an hour to firm up.  Using a large pastry bag with a large tip, or a spoon, top the graham cracker crust in each cup with the pumpkin mixture and refrigerate until ready to serve.

Cappuccino Chocolate Cheesecake Recipe

Ingredients:

  • 1¼ cup chocolate wafers crushed
  • ¼ tsp Bickford Cinnamon Flavor
  • 1 pk light cream cheese (8 oz)
  • 1 cup sugar
  • 1 cup unsweetened cocoa powder
  • 2 eggs or ½ cup egg substitute
  • 2½ cup light sour cream
  • 2 tbsp Bickford Coffee Flavor
  • 1 tsp Bickford Pure Vanilla Flavor
  • Semi-sweet baking chocolate

Directions:

Preheat oven to 325°.   Stir together wafers and Bickford Cinnamon Flavor.  Pat into bottom of 9-inch springform pan.  Beat cream cheese until light and fluffy.  Beat in sugar and cocoa powder.  Beat in eggs, stir in 2 cups sour cream, Bickford Coffee Flavor  and Bickford Pure Vanilla Flavor. Turn into pan.  Bake for 30 minutes or until set.  Spread remaining ½ cup sour cream evenly over top.  Return to oven for 1 minute to glaze top.  Cool, then chill, covered, then remove from pan.  Microwave 4 squares of remaining chocolate 1 minute at a time for approximately 2 minutes and drizzle over top.
