St. Patrick's Day Pretzels

A perfect treat to send to school for classmates or to treat your little leprechauns at home!


  • Bag of pretzel rods
  • Bag of dark green Candy Melts
  • Bickford flavor of choice (suggested: Butter Mint, Malted Milk, Mint, Peanut Butter, Toffee)
  • Sprinkles or other toppings (green sugar sprinkles, edible glitter, toasted coconut, nuts, etc)

  1. Line a cookie tray or your counter top with waxed paper for cooling the pretzels after dipping.
  2. Set up a plate or bowl to catch sprinkles/toppings as you apply them.
  3. Place the bag of green candy melts into a deep bowl and microwave according to the package instructions. Usually this involves microwaving for 1 minute and then stirring every additional 30 seconds until completely melted.)
  4. Stir in desired amount of Bickford flavor, to taste.
  5. Hold a pretzel rod over the bowl of candy melts angled down. Start spooning green candy over the end of the pretzel rod, covering as much of the pretzel as you like.
  6. Allow excess candy to drip off with gentle shakes. Move pretzel to sprinkle bowl and add toppings or sprinkles, as desired.
  7. Place pretzel rod on the wax paper to dry.

Gumdrop Candies

  • 3 envelopes plain (unflavored) gelatin
  • 1 1/4 cups water, separated into 1/2 cup and 3/4 cup
  • 2 cups sugar
  • Liquid food coloring
  • Bickford Mint, Spearmint, Orange, Lemon, Cinnamon, Cherry, or Anise flavoring
  • Oil for greasing candy mold/pan
  • Sugar for topping the candies


  1. Very lightly grease candy molds or pans with cooking oil. Set aside.
  2. Pour 1/2 cup cold water into a large bowl. Sprinkle with the gelatin, stir and set aside.
  3. To a saucepan, add 3/4 cup water and 2 cups sugar. Bring to a boil. Simmer for 5 minutes.
  4. Pour the hot sugar mixture into the gelatin mixture. Stir until the gelatin is completely dissolved.
  5. Break mixture into separate bowls for each color/flavor combination. For a full batch of just one color, add 24 drops of food coloring. If you separated the batch, just start with a few drops of each color and increase until desired color is achieved.
  6. For a full batch of just one color, add 1 tsp Bickford flavor and stir. Add more flavor, if desired. If you split the batch into separate bowls, start with a few drops of flavoring and increase to desired taste.
  7. Pour into pans or molds. Chill for several hours or overnight.
  8. Remove gumdrops from molds. Roll each gumdrop in a bowl of sugar to coat.

Peppermint Patties

2 1/4 cup powdered sugar
2 TBSP softened butter
1 tsp Bickford Peppermint flavor*
2 TBSP whipping cream
12 oz chocolate melting wafers


  1. In a mixing bowl, combine the powdered sugar, butter, Bickford Peppermint flavor and cream. Beat with a mixer on low-medium until the mixture comes together (it may still be a little crumbly). Turn mixer to high and mix until light and creamy. The mixture show have the consistency of play dough. If it feels sticky, mix-in a little more powdered sugar 1 TBSP at a time.
  2. Scrape the candy paste out onto a long piece of plastic wrap and form it into a tube-shaped roll about 1 1/2 inches in diameter. Wrap it well in plastic wrap and twist the ends.
  3. Chill in refrigerator for 1 hour or until firm. You may wish to move it's position frequently to avoid flattening the bottom of the roll.
  4. Remove from refrigerator, remove plastic wrap and use a sharp knife to cut into 1/4 inch thick slices.
  5. Melt candy wafers in a double broiler or in the microwave according to package instructions.
  6. Place each patty, individually, into the chocolate. Flip it to coat the other side and then remove, with a fork or dipping tool, to waxed paper. If patties become too soft for dipping, chill them in the refrigerator until firm.
  7. Leave to cool at room temperature. Store in an airtight container at room temperature for up to 2 weeks.
Yields about 36 candies
*Try it with Bickford Butter Mint flavor for a change to the classic peppermint!

Candied Popcorn

  • 12 cups popped popcorn
  • 1 (14 oz.) can Eagle Brand® Sweetened Condensed Milk
  • 1 (3 oz.) package unflavored gelatin
  • 2 tsp. Bickford Flavors Toffee (or flavor of choice)


Heat oven to 300º F. Line large shallow roasting pan with heavy foil, extending foil over edges of pan. Butter foil.  Pour popcorn into prepared pan. Keep warm in oven.  Combine sweetened condensed milk, toffee flavor and dry gelatin in medium saucepan. Heat and stir over low heat until mixture is slightly thickened and bubbly, 4 to 5 minutes.  Pour mixture over popcorn. Stir gently to coat using a long-handled wooden spoon. Bake 20 minutes, stirring every 5 minutes. Carefully turn out onto large piece of lightly buttered foil. Cool. Break into pieces or clusters.
