Italian Pasta Salad

Featuring Bickford Garlic Flavor, this bright and delicious pasta salad is a crowd pleaser and can be made in advance to make a gathering that much more enjoyable!

Ingredients

For Dressing:
  • ¾ cup olive oil
  • ¼ cup red wine vinegar
  • 1 TBSP Bickford Garlic Flavor
  • 2 tsp TBSP Italian Seasoning
  • 1 tsp salt
  • ½ tsp black pepper
  • 3 TBSP grated Parmesan cheese (optional)

For Salad:

  • 1 (16 oz) package rotini or penne pasta
  • 1 package grape or cherry tomatoes, halved
  • 1 yellow bell pepper, chopped
  • 1 red onion, chopped
  • 1 large cucumber, cut lengthwise twice then sliced
  • 1 cup broccoli florets
  • 1 cup black olives, pitted and sliced

 

Instructions

  1. Cook pasta according to package instructions
  2. Add all ingredients except dressing to a serving bowl and toss to combine.
  3. Add dressing ingredients to a shaker jar or cruet and mix.
  4. If serving immediately, add dressing and toss to coat. If serving later, add dressing just before serving.

Fettuccine Alfredo Recipe

Ingredients:

 

  • 8 oz fettuccine, uncooked
  • 1¼ cups fat-free reduced-sodium chicken broth
  • 4 tsp flour
  • 1/3 cup light cream cheese spread
  • 3 tbsp 100% grated parmesan cheese, divided
  • ⅛ tsp Bickford Nutmeg Flavor
  • ⅛ tsp Bickford Garlic Flavor
  • 2 tbsp chopped fresh parsley

 

Directions:

 

Cook pasta as directed on package.  Combine broth and flour in medium saucepan.  Stir in cream cheese spread and cook 2 minutes stirring constantly until mixture boils and toss pasta with sauce, 2 tbsp of the Parmesan cheese, Bickford Nutmeg Flavor and Bickford Garlic Flavor.  Sprinkle with remaining 1 tbsp Parmesan cheese and the parsley.  Season to taste with black pepper.

Tossed Pasta and Vegetables Recipe

Ingredients:

  • 1 (12-ounce) package whole wheat fettuccine
  • ½ tsp Bickford Garlic Flavor
  • 1 tsp Bickford Basil Flavor
  • ½ tsp dried oregano, crumbled
  • ½ tsp Bickford Rosemary Flavor
  • ½ cup vegetable broth, divided
  • 3 cups broccoli florets, chopped
  • 3 cups sliced zucchini
  • 2 cups sliced carrots
  • 2 cups sliced mushrooms
  • 2 cups thinly sliced red bell peppers

 

Directions:

 

Cook the pasta according to the package directions and drain well. While the pasta is cooking, take a large Dutch oven and slowly heat the Bickford Garlic Flavor, Bickford Basil Flavor, Bickford Rosemary Flavor and dried oregano in 3 tbsp of the vegetable broth until well blended.  Add the remaining stock and the vegetables. Cover and simmer for 5 minutes until the vegetables are bright with color but still crisp. Toss wit the pasta and serve immediately.

Easy Baked Ravioli Recipe

Ingredients:
  • 2 tsp. Italian dressing 
  • 1 medium red pepper, chopped 
  • ⅛ tsp. Bickford’s Garlic Flavor 
  • 1 can (15 oz) marinara sauce 
  • ¼ tsp. crushed red pepper (optional) 
  • 1 pkg. (9 oz) four cheese ravioli, cooked and drained 
  • ½ cup shredded low-moisture part-skim 
  •  mozzarella cheese 

Directions:

Preheat oven to 350°F. Heat dressing in large skillet on medium heat; add peppers, onions, Bickford’s Garlic Flavor.  Spread ½ cup of sauce mixture onto bottom of shallow 11 x 7-inch baking dish. Cover with layers of half each of the ravioli, remaining sauce mixture and cheese.  Repeat layers. Cover with foil and bake 25 minutes or until heated through.
