Our Approach to Oil-Soluble Flavors
Flavors are Bickford Flavors’ version of an extract.
Bickford flavorings are formulated to be stronger than an "extract,” where
1/2 teaspoon flavor = 1 teaspoon extract.
Through our approach, we never dilute our flavorings in alcohol - with the exception on our pure vanilla, which contains 35% alcohol by volume. Our oil-soluble flavors are suspended in a soy oil base.
Why? An oil-soluble base suspension is superior to alcohol because oil is a more neutral carrier than alcohol. Additionally, oil does not create any secondary flavors, and it does not evaporate as rapidly as alcohol does when exposed to heat.
The end result? Our flavors do not “bake-out” like traditional, alcohol-based flavorings, giving you a finished product that smells better, tastes better, and hits the highest notes among consumers.
